Plain Puppodums

Crisp puppodums sundried in Madras for an authentic flavour.

Serves 8

Black Chickpea Gram Flour, Water, Salt, Raising Agent (529), Rice Flour, Sunflower Oil.

To Deep Fry:
  1. Heat 5cm oil in large deep frying pan or wok until very hot (200℃). (To test: drop a small piece of puppodum into the oil, if it starts bubbling and expands immediately the oil is hot enough).
  2. Deep fry one or two at a time, holding under the oil with a metal spatula. The puppodums will expand in 2-3 seconds.
  3. Quickly turn the puppodum over, shake off excess oil and remove.
  4. For best results drain upright on kitchen paper. The puppodums will become crisp on cooling.
To Microwave (2 Puppodums):
  1. Lightly brush the puppodums with oil and place them on kitchen paper, two at a time.
  2. Microwave on high for 40-60 seconds (maximum), checking regularly to ensure they do not burn.
Note: COOKING TIMES WILL VARY. These instructions are based on a 750Watt oven.
