Spicy Eggplant Tikka by @activeandnourished

A spicy vegetarian curry, created by Instagram's @activeandnourished, that uses Sharwood's Spicy Tikka simmer sauce from our new Spice Kitchen range.

Shopping List

  • 1 pouch of Sharwood’s Spicy Tikka Simmer Sauce
  • 1 tablespoon olive oil
  • 3 finger eggplants, washed, halved and lightly salted
  • 1 tomato, cut into 8 wedges
  • 1 red onion, sliced
  • Optional / To serve -
  • Coconut yoghurt
  • Coriander leaves
  • Naan bread

Instructions

    1. Preheat oven to 190º C.
    2. Place eggplant halves, tomatoes and onions on a baking tray and mix with the oil to coat.
    3. Place in the oven and roast for 20 minutes or until cooked and tender.
    4. Place Sharwood’s Spicy Tikka Simmer Sauce in a saucepan and simmer on low for 4-5 minutes, add the roast vegetables and heat for another couple of minutes until all cooked through.
    5. To serve, drizzle coconut yogurt and fresh coriander on top, and some naan bread to soak up the yummy sauce.
