A spicy vegetarian curry, created by Instagram's @activeandnourished, that uses Sharwood's Spicy Tikka simmer sauce from our new Spice Kitchen range.

finger eggplants, washed, halved and lightly salted

tomato, cut into 8 wedges

red onion, sliced

Instructions
- Preheat oven to 190º C.
- Place eggplant halves, tomatoes and onions on a baking tray and mix with the oil to coat.
- Place in the oven and roast for 20 minutes or until cooked and tender.
- Place Sharwood’s Spicy Tikka Simmer Sauce in a saucepan and simmer on low for 4-5 minutes, add the roast vegetables and heat for another couple of minutes until all cooked through.
- To serve, drizzle coconut yogurt and fresh coriander on top, and some naan bread to soak up the yummy sauce.
