Spicy Eggplant Tikka By @activeandnourished
A spicy vegetarian curry, created by Instagram's @activeandnourished, that uses Sharwood's Spicy Tikka simmer sauce from our new Spice Kitchen range.
Serves 2
Ingredients
1 pouch of Sharwood’s Spicy Tikka Simmer Sauce
1 tablespoon olive oil
3 finger eggplants, washed, halved and lightly salted
1 tomato, cut into 8 wedges
1 red onion, sliced
Optional
Coconut yoghurt
Coriander leaves
Naan bread
Instructions
Step 1
Preheat oven to 190º C.
Step 2
Place eggplant halves, tomatoes and onions on a baking tray and mix with the oil to coat.
Step 3
Place in the oven and roast for 20 minutes or until cooked and tender.
Step 4
Place Sharwood’s Spicy Tikka Simmer Sauce in a saucepan and simmer on low for 4-5 minutes, add the roast vegetables and heat for another couple of minutes until all cooked through.
Step 5
To serve, drizzle coconut yogurt and fresh coriander on top, and some naan bread to soak up the yummy sauce.
